Corn
Muffins
¾ c. flour
1 ½ t. baking powder ¼ t. salt
1/3 c. cornmeal
¼ c. diced apples
¼ c. honey
1 egg, beaten
1/3 c. milk
3 T. shortening, melted
Sift together flour, baking powder and
salt. Add cornmeal. Combine egg, milk, hone and shortening. Add all at once to
flour mixture, stirring only enough to dampen. Fold in apple. Bake in
well-greased muffin pan at 400 degree F oven for 20 minutes or until done.
Yield: 12 muffins
