Apples
and Wild Onions
During coon-
and possum-hunting time this recipe comes to mind, for it’s delicious with
those meats. If you don’t have wild
meat, this would be a fine accompaniment for a fresh pork roast.
2 T.
vegetable oil
2 c. wild onion bulbs, thinly sliced
2 T. salt 2 c. wild onion bulbs, thinly sliced
2 T. sugar
6 cooking apples, peeled, cored, and cut into quarters
Pour oil
into a skillet and fry onions over medium heat until yellow and tender. Add apples, salt, and sugar. Cover and steam for 15 minutes, stirring
occasionally. Add a little water if
necessary to keep from sticking. Serve
hot. Serves six.
