Marmalade
1 medium
orange
6 medium apples
6 medium apples
2 c. water
3 T. lemon juice
3 T. lemon juice
5 c. sugar
Peel, core,
and coarsely chop apples to equal six cups.
Quarter unpeeled orange. Remove
seeds. Thinly slice orange. In an 8 to 10 quart kettle combine orange
slices, apples, water, and lemon juice.
Bring mixture to boiling. Reduce
heat; simmer about 10 minutes or till apples are tender. Add sugar.
Bring to full rolling boil, stirring constantly. Continue cooking and stirring till thickened
and clear. Remove from heat. Skim off foam with a metal spoon. Pour at once into hot, sterilized jars. Seal and process. Yield: 6 half-pints.
